Air-Fried Chicken Taquitos

Skip the drive-thru and make these taquitos at home. Serve with a side of salsa, fresh salad, or queso dip. ALL ingredients found at Aldi!


Ingredients:

  • Carlini Extra-Virgin Olive Oil

  • Pueblo Lindo Yellow Corn Tortillas

  • 1lb Tyson Ground Chicken

  • 1 pack Casa Mamita Taco Seasoning

  • 1/3 C Chef's Cupboard Chicken Broth

  • 1/4 cup Happy Farms Mild Cheddar shredded cheese

  • 1/4 cup Happy Farms Taco Style shredded cheese

  • Carlini Olive Oil Pan Spray


Recipe:

  1. Add a small amount of olive oil to a skillet and brown chicken.

  2. Sprinkle all but 1/2 t taco seasoning over cooked chicken. Toast spices lightly by stirring the mixture over the heat.

  3. Add chicken broth. Bring to boil. Reduce to simmer.

  4. When meat is flavorful (add salt if desired) and cooked through, remove from heat.

  5. Build taquitos by spreading 2T chicken and a pinch of both cheeses in corn tortilla.

  6. Roll tortillas tightly and secure with a toothpick. (If the tortillas crack, microwave them for 30 seconds to make them more pliable).

  7. Place rolled tortillas in air fryer pan.

  8. Spray with pan spray and sprinkle with remaining taco seasoning.

  9. Air fry until evenly browned.
