Southwestern Potato Cakes

This is a great side dish that I created while I was in culinary school. I especially love looking at Aldi for the ingredients in bold.




Ingredients:

 
  • 2 Baking Potatoes

  • 1 can Happy Harvest Canned Whole Kernel Golden Sweet Corn

  • 1 Jalapeno Peppers, seeded, ribs removed, diced

  • 1 Multi-Colored Pepper

  • 1/4 C breadcrumbs

  • 2 eggs

  • 1 t sea salt

  • 1/2 t cumin

  • 1/2 t garlic powder

  • 1/2 t onion powder

  • 1/2 t paprika

  • 1/2 t chili powder

  • 1T olive oil

  • dash of cayenne pepper

Recipe:

 
  1. Peel, dice and boil cubed potatoes in salted water until fork tender.

  2. Drain and mash potatoes.

  3. Mix breadcrumbs, seasoning, salt, eggs, vegetables, and oil.

  4. Combine breadcrumb mixture with mashed potatoes.

  5. Fry small scoops of the potato mixture in olive oil.

  6. Carefully flip each spoonful over and gently press with a spatula to create a round patty.
